There are many different kinds of instant dry yeast available for use in your bread machine, but there are only two basic kinds – the quick rise and dry active dry yeast. One of the major advantages of dry yeast is its low production cost and excellent shelf life. As a result of this, yeast can be transported to longer distances without worrying about spillage or damage to the product. Furthermore, dry yeast can be stored at ambient temperature for up to two years, and thus, it does not require special cold storage. In fact, the product can be added directly with other dry ingredients, which prevents the fuss of mixing ingredients and liquid separately. Therefore, such factors can stimulate growth of the instant dry yeast market.  Recently, in Jun 2019, AB Mauri Food Inc. expanded its headquarters in St. Louis, U.S., aiding yeast strain R&D activities.

Dry yeast is typically used in food and beverage industries in a wide variety of products including the brewery, bakery, and other confectionery items. As per the U.S. Department of Agriculture (USDA) Foreign Agricultural Service’s Global Agricultural Information Network’s report, India was expected to record over 3 billion liters of ethanol in 2019, increasing by 11% from 2018. As per the same source, in 2018, 2.7 billion liters of ethanol were produced from molasses. As a result of this, the demand for dry yeast is likely to surge, which could further fuel growth of the instant dry yeast market.
