Before being loaded onto ships that sail the ocean, Jefferson's Ocean Rye is matured in both fresh char and toasted barrels. The whisky is then non-chill filtered to further enhance the flavour profile after this unusual ageing process. 

 

Trey Zoeller and his father Chet, a well known bourbon historian, created Jeffersin's in 1997. They were carrying on a family practice of drinking whisky that dates back to Trey's 8th generation grandmother, who was detained in 1799 for the production and sales of spirituous liquors. His inquisitive and exploratory nature upholding tradition while continually exploring new options. Featuring a salted caramel and ginger undertone, the odour is fresh and light. The flavour is warm and nuanced, with hints of allspice berries, sea salt caramel truffles, and a few exotic fruits. A warm, medium length finish with a developing vanilla aroma is present. 

 

The ship's continual motion causes increased contact with wood as the first effect. That constant contact with the wood brings out colour, it brings out more flavour, explains Zoeller. Additionally, it strengthens the charred oaks filtering action, lowering the astringency of the whisky.
