  • 8 cups concord grapes
  • 4 cups Goodgood's sweet like sugar
  • ½ teaspoon lemon juice 
  • ½ teaspoon unsalted butter

How to make concord grape jelly

  1. First, you need to separate the grape skins from the pulp by squeezing the grapes between your fingers. Then put the skins in the food processor and chop them coarsely. 
  2. Then, put the chopped skin in a pot with a heavy bottom and pour water (¼ cup) and simmer it on medium flame for about 10 minutes. The skin will be softened. 
  3. Then, place the grape pulp in a medium saucepan and boil it. After some time, reduce the heat and simmer it for some more time, for about 10 minutes. The grapes will lose their shape.
  4. Pour this grape pulp through a sieve into a big bowl. Discard the seeds. 
  5. Shift this pulp to the pot with grape skin. Mix it well. 
  6. Then add the sweet like sugar, butter and lemon juice. 
  7. Bring the mixture to boil and keep stirring continuously. 
  8. Reduce the heat and simmer while stirring continuously until the jam has reduced and thickened and reached the gel stage, about 45 minutes. 

To test the jam, place a small plate in the freezer. When it is chilled, put a spoon of the jam on it and place it in the freezer for a minute. Then, drag your through the jam and tilt the plate from side to side. If the jam stays put and doesn't run, it's set. If not, simmer the jam for a few minutes more.

After that, put this jam into the jar. Allow it to rest in the jar undisturbed for at least six hours or overnight.
