1. Butter Cake

4. Chiffon Cake

This is a recent American creation. It was first invented by a salesman who sold the recipe to General Mills. Chiffon cake is kind of in-between an oil cake and a sponge cake. This recipe includes baking powder, eggs and vegetable oil. But eggs are separated, whites are beaten soft before folding into the batter. This creates a cake with rich flavours like an oil cake and a lighter texture.

6. Flourless Cake

Flourless baked cakes include cheesecakes and flourless chocolate cakes. They are often made in springform pans and some can also be made in regular round layer cake pans.  This is basically baked in the form, the filled pan is placed in a larger pan that's half-filled with water to insulate the delicate, which might give the baked cake a porous rather than silky texture. 7. Genoise Cake

Genoise cake is nothing but a sponge cake in Italy and France. In genoise, whole eggs are beaten with sugar until they're thick and then flour is added and finally this batter is baked. The result is a wonderful baked cake with simple frosting. Genoise can also be baked in a jelly-roll pan and rolled up into a roulade.

Genoise is often used to construct layered or rolled cakes. To add flavour and moisture, genoise cake layers are always kept moistened with a flavoured syrup. They are sliced into thin horizontal layers and stacked with rich fillings such as buttercream. These layer cakes were very commonly found in the coffeehouses of Europe.

8. Angel Cake

Angel cakes are made with egg whites alone. The whites and sugar are whipped together until very firm before folding in the flour. This results in a snowy-white, airy and delicate cake that is beautifully styled with fruits. Most angel food cakes are spongy and chewy. They are generally baked in ungreased two-piece tube pans. Angel cakes are cooled in the cake pans themselves because this type of cake would collapse if removed from the pan while still warm. As the cake is butter-free, it is fat-free.

9. Unbaked Flourless Cake

Unbaked flourless cakes include unbaked cheesecakes and mousse cakes. These types of cakes are typically molded in a springform pan and then simply chilled before unmolding. These cakes have a crust that's baked before the mousse is added.

10. Cup Cakes

These cakes are general and the same as normal cakes. But it is a small cake which is designed to serve only one person. They are baked in small thin paper cups. As usual with the large cakes, these are also decorated with fruits, candies, frosting and more.
