Perhaps due to the frosting's glimmer, the term “éclair” signifies “flash of lightning.” Its history dates to the 19th century when people knew it was called “petite duchesse,” some food historians believe that a chef may have also invented this.

Religieuse

This is known as one of the best-known desserts and was developed in the 19th century. Its moniker, “nun,” comes from the fact that two choux buns are layered on top of one another to resemble a chubby nun with a tiny habit draped over her shoulders. The top and bottom circles of the religieuse are filled with cream or custard, with the full process being larger and fatter. Some variations include flavours like rose, caramel, coffee, or chestnut cream.

Cannele

A little, crisp, caramelised brown cake is prepared with flour and egg yolks with a custard-like middle with hints of rum and vanilla. It has a recognisable cylindrical shape. The channels are baked in fluted copper moulds according to nuns' traditional recipe allegedly created in the 17th century.

Chocolate Pain au chocolate

This term, which originally had a toast base and means “chocolate bread,” has since changed to employ the same buttery, flaky dough as a croissant. It is also known as chocolatine and initially appeared in the early 19th century.

Mille Feuille

Two layers of puff pastry alternate with two layers of pastry cream in a mille-feuille, meaning “a thousand leaves,” and the top is sprinkled with powdered sugar. Some mille-feuille varieties incorporate whipped cream, fruits, custard, or chocolate glaze.

Profiterole
