Hi there! In a couple of days, it is my birthday (31) and I wanted to celebrate it on the blog by sharing a recipe that left me crazy on the honeymoon: mango sticky rice. Before going to Thailand I had read about it (I am the typical freak who, before going to a destination, looks at all the typical foods that can be to have a complete experience of the site visited) but I had never tried it.

What is mango sticky rice?

Mango sticky rice is, as you said the name, a traditional dessert Thai of sticky rice with mango pieces. The rice becomes sticky thanks to the mixture of glutinous rice, coconut milk, and sugar. As the original recipe is quite “gotcha” for the amount of sugar it has, I wanted to reduce it a lot and make it as healthy as possible. In any case, as this dessert is for occasional consumption, there is no need to worry about more.

 Ingredients

200gr of semi-integral jasmine rice

50gr of sugar

1 can of coconut milk

1 ripe mango

A few peanuts

Coconut flakes

Elaboration

Cook the rice according to what you put in the container. I used steamed semi-brown rice, which comes in small perforated bags and is ready in 10 minutes.

In a saucepan, add the sugar and coconut milk and bring to a boil. Once it boils, lower over medium heat and let it evaporate a little until you have a thicker sauce. It will take you between 8 and 10 minutes. If you see that it takes longer, be patient, it will be worth it.

Pour half of the sauce into a bowl and let it cool. Keep cooking the other half of the sauce on the fire until it is a little thicker still. 5 more minutes will be enough.

In the bowl of cold sauce, pour the cooked rice and stir. It has to be well impregnated. Let it sit for 30 minutes.

Plating: peel and chop the mango, put it on a plate, and serve it with the sticky rice. Pour some of the thicker sauce over the rice and sprinkle a few peanuts and a few coconut flakes on top. Delicious.
