For Curry Traders Goan fish curry recipe you will need:

1 x Goan Fish Curry Traders Kit

1kg of white-fleshed fish or chicken thighs or breast

5 cloves garlic

2 lemons

2 green chillies

440ml coconut milk

salt

1 tablespoon of ginger

2 tablespoons of vegetable oil

4 large onions

400g tin chopped tomatoes or 4 tomatoes

Preparation

In preparation for cooking your curry, dice the onion finely, cut 1 lemon into wedges, and juice half the other lemon, grate the ginger, crush the garlic, dice the tomatoes, and cut the fish into serving sizes. If you are using chicken, cut it into bite-size chunks.

How to cook Goan fish Curry

Step 1) Place a large saucepan onto a cooktop and heat oil over low/medium heat.

Step 2) Add the diced onions to the saucepan and BAG 1 of Curry Traders spice kit, cook for 20 minutes while stirring occasionally.

Step 3) while the onions are slowly cooking, grind the contents of BAG 2 and BAG 4 in a mortar and pestle.

Step 4) Then, mix in BAG 3 with the garlic and ginger until it creates a paste.

Step 5) Stir paste into the onions and cook for 2 minutes or until you can smell the aroma.

If using chicken:

  • Add the chicken to the saucepan and coat in the paste. Cook the chicken for approximately 5 minutes, or until brown.

Step 6) Stir in the diced tomatoes and let cook for five minutes.

Step 7) Stir in the lemon juice, whole green chillies, and coconut milk. Let the curry simmer on the cooktop for 30 minutes uncovered.

If using fish:

  • Add the fish to the curry sauce and cook fish for five minutes or until the fish flakes.
  • Taste test the curry sauce and season with salt if desired.
