When planning commercial kitchen equipment, one question comes up again and again: which stainless steel grade is actually safe and acceptable for food use? Many buyers hear “FSSAI approved stainless steel” and assume there is one specific grade with an official FSSAI stamp. The reality is a little different. FSSAI focuses on food safety, hygiene, corrosion resistance, cleanability, and suitable food-contact materials. It does not simply approve one stainless steel grade for every kitchen application.

For most professional kitchens, however, SS 304 is the practical choice. It is widely used for food-contact surfaces, preparation tables, sinks, storage units, counters, and kitchen equipment. FSSAI's own hygiene-rating material specifically lists stainless steel Grade 304 for equipment and food-contact materials.

Does FSSAI officially approve SS 304?

This is where the confusion starts.

FSSAI regulations set hygiene and safety requirements for food businesses. Equipment and containers used for food handling should be made from materials that are non-toxic, corrosion-resistant, easy to clean, and suitable for maintaining sanitary conditions. FSSAI training material also recommends stainless steel and other corrosion-free materials for food-handling equipment.

So, it is more accurate to say:

SS 304 is a widely accepted and recommended grade for commercial food applications, rather than calling it an “FSSAI-approved grade.”

FSSAI's hygiene-rating checklist gives strong practical support to Grade 304. It describes food-contact equipment made from stainless steel Grade 304 and stresses that such surfaces should be easy to clean and disinfect.

Why SS 304 is the preferred choice

SS 304 is an austenitic stainless steel with good corrosion resistance and durability. It also has a smooth surface that can be cleaned frequently without much trouble.

That matters in a commercial kitchen.

Kitchen surfaces face water, steam, food acids, salt, heat, grease and strong cleaning agents every day. Poor-quality metal can stain, corrode or develop rough areas. Those defects can make cleaning harder and create places where food residue can collect.

A properly fabricated SS 304 surface offers a better balance of hygiene, strength, durability and cost.

Where should SS 304 be used?

For most kitchen projects, SS 304 works well for:

  • Work tables and preparation counters
  • Food-contact surfaces
  • Sinks and washing areas
  • Storage racks
  • Shelving
  • Cabinets
  • Food preparation equipment
  • Trolleys and service counters
  • Containers and utensils

FSSAI guidance also stresses that food-contact surfaces should be smooth, intact and free from cracks, pits, corrosion and other defects.

The grade is important, but the fabrication quality matters just as much.

What about SS 316?

SS 316 is often considered a premium alternative to SS 304. It contains molybdenum, which improves resistance to certain forms of corrosion, especially in environments exposed to chlorides and salts.

That can make SS 316 useful in demanding applications. For example, it may be considered where equipment faces high exposure to saline ingredients, aggressive cleaning conditions or particularly corrosive environments.

But SS 316 is not automatically required by FSSAI for every commercial kitchen.

For a standard restaurant, hotel, café or catering kitchen, SS 304 is generally the more cost-effective option. Upgrading everything to 316 can increase the project cost without delivering a meaningful benefit in every area.

Don't ignore the stainless steel finish

A common mistake is to focus only on the grade.

A kitchen can use SS 304 and still have hygiene problems if the surface is badly fabricated.

Look for:

Smooth surfaces

Food-contact areas should have a clean, smooth finish without deep scratches, pits or open imperfections. Smooth surfaces are easier to wash and disinfect.

Proper welding

Poor welds can leave gaps and rough joints. These areas can collect grease, water and food particles. Good fabrication should produce clean, properly finished joints.

Easy drainage

Tables, sinks and equipment should not create unnecessary pockets where water can sit. FSSAI guidance places importance on equipment being designed for effective cleaning and drainage.

Correct thickness

Thicker metal can provide better rigidity and service life, especially for heavy-duty tables, counters and equipment. The right thickness depends on the application, load and design. A thicker sheet is not automatically better if the overall fabrication is poor.

What does BIS certification add?

FSSAI compliance and BIS certification are not the same thing.

BIS sets Indian Standards for specific products. For stainless steel utensils, IS 14756 lays down requirements covering materials, construction, finish, dimensions and performance. The standard includes SS 304 among the permitted material grades for stainless steel utensils.

BIS also lists stainless steel utensils under its certification framework.

This gives buyers another useful checkpoint. When purchasing utensils or applicable products, ask the supplier about the relevant Indian Standard and certification instead of relying only on the phrase “FSSAI approved.”

How to choose the right grade for your kitchen

Before placing an order, ask these questions:

1. What grade is being supplied?
Ask for the material specification instead of accepting a generic “stainless steel” claim.

2. Is the food-contact area suitable?
The material should be appropriate for its intended food application.

3. How is the equipment fabricated?
Check welds, corners, joints, edges and surface finish.

4. Is the design easy to clean?
Avoid unnecessary crevices, inaccessible corners and water-holding areas.

5. Can the supplier provide documentation?
For larger projects, material specifications, test documents and applicable BIS certification can provide useful assurance.

A reliable hotel kitchen equipment supplier in Delhi should be able to explain the grade, thickness, finish and fabrication method rather than simply quoting “food-grade stainless steel.”

The practical answer: SS 304 is the safe starting point

If you want one simple answer, SS 304 is the standard starting point for most commercial kitchen applications. It has strong corrosion resistance, good durability and excellent suitability for food-contact environments.

But don't reduce food safety to a grade number.

FSSAI compliance also depends on hygiene practices, equipment design, maintenance, cleaning, storage and safe food handling. Current FSSAI regulations continue to place emphasis on hygienic and sanitary practices for food businesses.
