The scene seemed to have peaked last year when I began our yearly hunt for the top new eateries in America. The pace of intriguing openings appeared to be slowed by staffing shortages, inflation, and the pressure that rising interest rates were placing on investors. The momentum that restaurants experienced in 2021 when business sprang up again has faded. But despite the sea of sameness, chefs and restaurateurs continued to innovate. And as 2022 gave way to 2023, you could feel the sector regaining momentum in American cities. We traveled across the nation once more in pursuit of the best, and in Houston, we discovered exceptional cooking from a Top Chef fan favorite who is establishing her first restaurant with another chef.

1. Tatiana by Kwame Onwuachi, New York City

There are some recipes you shouldn't try to make. The classic "chopped cheese" dish from bodega shops in Harlem and the Bronx, which involves dicing burger patties as they cook on a hot griddle while using metal spatulas, is excellent as is. However, Chef Kwame Onwuachi vehemently disputes that claim, and it turns out that he is correct. His enhanced chopped cheese, prepared with aged rib eye and Taleggio sandwiched between toasted brioche and topped with black truffle, is served at the height of truffle season and is a precisely timed umami explosion. 

2. Ember Kitchen — Austin

"Austin's premier Josper oven experience," referring to the kitchen's special hybrid grill/oven technology. A Josper oven simply creates a variety of foods using only one unit. The menu offers a variety of dishes prepared with the Josper as well as small plates. These include filet mignon, entire fish, and Texas Wagyu skirt steak. In the short time that Ember has been operating, it appears to have had a significant impact on the neighborhood. 

3. Indienne, Chicago

Sujan Sarkar, a chef, has stated that he wished to "make Indian food sexy." He believed the cuisine of his native nation lacked the fashionable arrangements he had seen elsewhere. He was eager to take Indian flavors and push them creatively, departing from traditional preparations to produce eye-catching meals with a modern flare. He has cooked all over the world, from London to Delhi to San Francisco. While Rooh in San Francisco and Baar Baar in New York City received positive reviews, his new tasting-menu restaurant in Chicago is the realization of those aesthetic objectives.

4. Claud, East Village | NEW YORK

Claud launched in August and was immediately hailed as one of New York's best new wine bars. Being a terrific wine bar is a peculiar kind of accolade, one that undoubtedly contributed significantly to wine bars becoming fashionable in NYC for the nth time. In addition, co-owner Chase Sinzer worked as the wine director at Dave Chang's Momofuku Ko, where he first met Joshua Pinsky, who is now the other half of the Claud partnership and was Ko's chef de cuisine at the time.

5.Copra — San Francisco

If Srijith Gopinathan's name comes to mind, there's a good chance you've visited Taj Campton Place at any point in the previous 15 years. Before departing to launch Copra, a restaurant serving Indian food in San Francisco, Gopinathan won both of his Michelin stars at the renowned hotel restaurant. The restaurant is in the Fillmore District and serves food from Southern India. Gopinathan wants customers to feel completely immersed in an authentic Southern Indian experience, as he explained to Robb Report, from the design of the food to the design of the restaurant space itself.

6. The Laundromat

A restaurant is a laundromat. A full-service eatery, it offers delectable bagels in the morning, pizza in the afternoon, and meals in the evening. It offers a huge selection of beer, wine, and coffee beverages. Jaimi Holker, Adam Bergeron, Kevin Rodgers, and Jenna O'Connell are the owners. In addition to running the Balboa Theater (just across from The Laundromat), the Vogue Theater, and the soon-to-be-reopened 4Star Theater and Park Theater, Jaimi and Adam also own Cinema. The Crepe Place in Santa Cruz, which will shortly celebrate its 50th year, and Blue Ceiling Prop Shop, as well as Jaimi's job as a prop stylist in the Bay Area, are other businesses they have owned for several years. 

7. Gold Creek Station

JW Anderson established the Gold Creek Station eateries in 1913. It offers fantastic meals and drinks. Fish, chips, and pancakes are among its specialties. Mountainous Gold Creek Station is a stunning location. It provides overnight housing, a fully stocked grocery shop, a full-service restaurant, and a saloon. We are your base camp in the mountains for hiking, camping, hunting, off-roading, fishing, snowmobiling, or just going for a drive. People from far and wide come to enjoy the famous fish and chips.
