Blossom or Varietal honey comes from a single source of nectar or one single flower blossom source that is foraged by the honeybees. This type of honey is also referred to as mono-crop honey. Different sources of nectar produce vastly different or 'varietal' kinds of honey that are imbibed with a particular flower's characteristics. The process of making varietal honey is similar to that of varietal wine, for which a single variety of grapes are used. For instance, they need five square miles of only a single flowering plant; bee hives placed strategically placed in the center of the flowering field; suitable weather conditions that help the bees produce excess honey which can be harvested; and accurate timing and ability to harvest the honey before the source flowers begin to fade. For the harvest of varietal honey, timing is key at each step of the process. Any delay or rush can spoil the produce, rendering it useless for sale.
