Procedure:

Soak a cup of red chilies in hot water for a minimum of 30 minutes and then blend it into a fine paste.Heat the sesame oil in a pan. Add the ginger and garlic, and fry them for a while (2 minutes approximately).Add the onions and saute everything until they turn translucent.Stir in the red chili paste and sprinkle in the salt and pepper according to your taste. Saute everything for two minutes. Keep adding water to maintain consistency and keep stirring.Once you notice that the oil starts to separate from the red chili sauce, stir in the soy sauce and the vinegar in the same pan.Continue cooking for about a minute or two.Let it cool and you are done.

Kashmiri dried red chiliesRice vinegarGrated gingerMinced garlicSugarTomato ketchupCornflour Water

 

Procedure:

Grind the Kashmiri red chilies. Bring the water and vinegar to a boiling saucepan. Once it reaches a roiling boil, add the sugar, ginger, garlic, red chilies, and ketchup.Let it cook for about 5-6 minutes.Prepare a cornflour slurry and stir it into the red chili sauce.Now allow the sauce to cool.
