Casein and Caseinate : Introduction

The coagulation of casein and the separation of whey are also used in the preparation of rennet casein. The casein curd is then cooked and washed to remove whey protein, lactose, and soluble salts, and the washed rennet casein curd is then dried, just as acid casein. Rennet casein has a larger mineral concentration than acid casein and caseinates, owing to the fact that it is produced without acidification, allowing MCP to remain in the product.
