Neapolitan Pizza Dough Recipe:
Ingredients –
1. 11 lbs Italian flour “00” (You can use Caputo 00 or Molini Pizzuti)
2. At 55 degrees Fahrenheit, 3.25 quarts of water
3. 1/2 oz. Yeast (Fresh)
4. Salt (5 oz.)
Procedure –
Step 1: In the mixer, add water.
Step 2: Dissolve the yeast in the water.
Step 3: Start the dough mixer.
Step 4: Start adding the flour.
Step 5: During the first two minutes of mixing, add 80 percent of the flour.
Step 6: Season with salt.
Step 7: Allow for a total of 15-20 minutes of mixing time.
