The ingredients required to make this dish are chicken legs (de-skinned and trimmed fat, cut into serving pieces). To make the first marinade; ginger garlic paste, Kashmiri chili powder, lemon juice & salt to taste are needed. To create the second marinade; greek yogurt / hung curd, ginger garlic paste, Kashmiri red chili powder or any chili powder that brings out good color, coriander powder, garam masala powder, black salt or regular salt, black pepper powder, cumin powder, mustard oil, red food color (optional) are essential. 

Mutter Mushroom Pulao

The ingredients significant to make this pulao are; Mushroom, green peas or dried peas, basmati rice, water or coconut milk, cooking oil, Cinnamon, Cloves, Cardamom, Black stone flower/ Kalpasi, Fennel seeds, bay leaf, Big onion, ginger garlic paste, green chili, mint leaves, salt – as needed & lemon juice few drops. 

Konkani Fish Curry

The ingredients required to make fish curry are; cleaned white pomfrets, coconut oil, coriander seeds, fenugreek seeds, whole dry red chillies, turmeric powder, fresh, grated coconut, tamarind soaked in water, finely grated ginger, green chillies, kokum & salt to taste are the gathered and then used as per cooking instructions. 

Lamb Rogan Josh

There are many variations of lamb curries in India, and this one comes from Kashmir. This northern state of India is very popular for its colorful food. In this dish; juicy pieces of lamb are cooked in a lavish & tasty sauce. The ingredients required here are; onion paste, roughly grated large red or brown onion & water. To make the ginger garlic paste; peeled & chopped ginger, peeled and grated garlic cloves & water are vital. To make the rogan josh spice mix; fennel seeds, cumin seeds, coriander, ground turmeric, garam masala, paprika & red chili powder are paramount. To make lamb rogan josh; oil, green cardamom pods, cloves, dried bay leaves, tomato paste, canned diced tomatoes, lamb, cut into small bite sized pieces, natural yogurt, salt to taste & chopped coriander or mint leaves, to embellish are basic.

Hyderabadi goat biryani & murgh shahi korma are the two other dishes that you can get.
