What do you think of when you hear the word ‘BIRYANI’? Do you start imagining it? Your mom brings out a pot of fresh hot biryani from the kitchen and places it on the dining table. You can even smell the aroma of the spices, and the masalas and you can imagine it on your table for Sunday lunch. You’re not the only one!

This is the effect that biryani has on all of us. It’s aroma, it’s appearance and most importantly it’s taste, each and every aspect of the biryani makes our mouth water.

As much as I love eating biryani, I also enjoy the process of cooking it. I have cooked biryani countless times and trust me, the taste of the biryani depends on the small intricate details of how you cook it. You have to really pay attention to detail to get the perfect taste.

Oh but don't fret, because all that attention is going to be well worth it in the end when you sit down and eat the  delicious masterpiece that you cooked.

Well, if you’ve decided that cooking biryani is your cup of tea, here are a few mistakes that most of us do while cooking that might not look like giant mistakes but they  impact the flavour of the biryani in a gigantic way.

Here are the biggest mistakes that you should avoid while making biryani at home:

  1. Not knowing that the quality of rice also plays a part in the flavour of biryani.
  2. Using khade masale or whole spices gives that extra kick to the biryani and the characteristic aroma, so don't be a miser while using them.
  3. Don’t overcook the rice. You’re welcoming disaster if you cook the rice completely before adding the meat. The rice should always be parboiled.
  4. The ratio of onions in a biryani controls the amount of spice or sweetness in it. So you should take care of using the perfect balance of onions.
  5. It’s very crucial to season the rice with salt. The flavour of biryani comes through with the rice and it should be seasoned well.
  6. It is always advisable to make your own biryani masala at home or even if you don’t, just make sure that it is fresh.

I’m always looking for recipes that are easy and that don’t take much time to cook without compromising on the taste. Most of the time, you can avoid these mistakes just by using ready to cook curry pastes that are available in the market. I recommend using the instant biryani paste by CURRYiT, they have really nailed the consistency and the flavour and incorporated every detail in the paste. It’s preservative free, made with Desi Ghee and the entire process just gets done in about 30 minutes. Using such pastes can help you avoid mistakes big time without compromising on the quality and taste.
